Eat a Rainbow

Rainbows are always a delight to see, so why not see one on your plate? All five of your senses are at play when you eat, so delight your eyes and make your stomach happy too. Colourful fruits and vegetables provide a variety of beneficial nutrients including minerals, vitamins, protein, calcium, fibre and even antioxidants.

So what, now what? Add fruits and veggies to meals and snacks for a nutritional power boost. Here are a few fresh ideas to bring more colour to your day:

Add red and green chilli/peppers to your scrambled eggsRoast beetroot with red wine vinegar and olive oil and serve as a side dishReplace spaghetti with spiralised butternut or zucchini
